To prepare Türk Kahvesi

The original Turkish coffee is prepared in a Turkish mocha pot, the Cezve (Ibrik). 

Such a cezve is first filled with cold water - about 50 ml per cup. Bring the water to a boil in Cezve and then remove the cezve from the stove. 
Only then add the coffee - 1 heaped tsp (per cup of water used) - and boil again on a low heat, stirring occasionally.
Once the coffee lathers, remove the cezve from the heat and stir a few times. Then put the mocha on the stove again and let it froth. With good Turkish mocha, each cup should be covered by a thick foam blanket. For this you can skim the foam after the first boil and distribute it in the cups. (The more often you let the mocha foam, the thicker the coffee and the more intense the taste.)

Did you know?

In his home country, the mocha is drunk with a lot of sugar, which is added at the same time. On a cup comes at least a teaspoon of sugar. 
In many countries, mocha is refined with cardamom, cinnamon or cloves. If you want to give it a try, simply add the finely ground spices together with the coffee powder to the Ibrik.

This is how the perfect mocha succeeds

Characteristic of the mocha is the high sugar content and the added coffee grounds. Often the mocha is also refined with cardamom, cinnamon, cloves or rose water. 
We explain step by step, what is important in the preparation of a good mocha.

1st step: Mocha - the preparation

Aroma of the Orient
"Ibrik" or "Cezve" are the original Turkish mocha mugs. They are usually made by hand from copper and available in different sizes. Such an ibrik is first filled with water - about 50 ml per cup. 
In his home country, the mocha is drunk with a lot of sugar, which is added at the same time. On a cup comes at least a teaspoon of sugar.

2nd step: Mocha - the right degree of grinding

Fine as powdered sugar
As the mocha coffee powder is heated together with the water and also poured with, the coffee for the mocha must be ground extremely fine , so that it has the consistency of flour or powdered sugar. In short, the finer, the better.

3rd step: Mocha - the amount of coffee

How much coffee for a good mocha? 
For a cup of mocha you need 1 heaped teaspoon of coffee powder. However, the coffee powder is only added in the second step (see step preparation).

4th step: Mocha - the preparation

With foam and coffee grounds
Boil the water in the Ibrik and then remove the Ibrik from the stove. Only then add the coffee and boil again on a low flame. stirring occasionally. 

Once the coffee lathers, remove the Ibrik from the heat and stir a few times. Then put the mocha on the stove again and let it froth. With good Turkish mocha, each cup should be covered by a thick foam blanket. For this you can skim the foam after the first boil and distribute it in the cups.
